Baldwin is a town in Chemung County, New York, located east of Elmira and part of the Elmira Metropolitan Statistical Area. Named for early settlers Thomas and Waterman Baldwin, it had a population of 818 at the 2020 census.

Located at 10 Woods Avenue, the Grist Mill Museum is a historic attraction in East Rockaway. This 2+1⁄2-story, T-shaped timber-frame building was built about 1689 and restored to its current site in Memorial Park in 1963.
The structure features an original section with one large addition and two smaller wings attached to each side.
